THE DETAILS

This exceptional Haitian Blue coffee comes from Coopacvod, one of the oldest known cooperatives in Haiti. This is the only Arabica Blue Mountain being exported from Haiti at this time and it is the only Organic Coffee found in Haiti as well.

The cooperative’s President, Francis Dubois, was an ex physics professor from Port au Prince. He has used his knowledge to use local river water to power the wash facility at the cooperative, and then he uses a tank system to filter it before it returns to the river. This helps to prevent the acids found in coffee cherries from harming the surrounding ecosystem and other local farms.

Coopacvod has also committed to growing 100% Organic and Shade Grown coffee. They plant a number of diverse species around and on their farms including bananas, avocados, oranges, and peanuts. They are the operators and beneficiaries of our Own-A-Tree Project.

MEET THE FARMER

Nestled in the mountains just south of Cap Haitian, this is the oldest running cooperative in all of Haiti. COOPACVOD has over 850 members and workers and produces the only organic certified, arabica blue mountain coffee in all of Haiti.

WHY CAFE KREYOL?

We believe farmers should get paid based on the quality of their product and we practice this belief by paying up to 300% higher wages than what Fair Trade requires.

This Direct Trade system, that is now the backbone of Cafe Kreyol, believes that quality and sustainability are parallel.

Our story continues as we work to alleviate poverty in rural coffee growing regions, one cup at a time.

Every roaster is different, and you know your roasting method best. Please use this information to help you develop your own roast profile, and make great tasting coffee.

This island profile coffee has naturally low acid levels. You’ll want to accentuate the natural sweetness of the bean by having a low and slow roast to properly caramelize the sugars. Be careful not to “bake” the beans by flatlining your curve. This is a very forgiving bean that tastes great at all roast levels.
      • Bean Density: Medium
      • Moisture Level: 11.2%
      • Cupping Score: 88 points
