It has been a long time since we could all consistently find that rich blueberry Harar, or that jasmine floral Yirgacheffe. After years of profiles changing from region to region in Ethiopia, Cafe Kreyol’s post harvest process and sourcing team decided to go a new route.

As opposed to labeling these Ethiopian coffees based solely on the region, and assuming they will have the flavor profiles we are all looking for, our skilled QC along with our post harvest process technicians, and a network of over 300 producers in three regions of Ethiopia, began to classify them. If you need more details on the processing method and region, go ahead down to our featured farmer section below, but what we can guarantee you is that our Sweet Lily Fruity, will always be a fruity cup with the traditional Ethiopian processing imparting the acidity that we are all looking for.

      This graph is a guideline for how we roast this coffee using a Drum Roaster.

      Every roaster is different, and you know your roasting method best. Please use this information to help you develop your own roast profile, and make great tasting coffee.

      Extra long soak upfront (shutting your heat once you put the coffee in), and then a strong heat upfront that slowly tapers off, while still aiming for a fast roast. On our drum we like to finish this right in the middle of a rolling first crack, to bring out strong notes in the delicate yet complex acidity. Keep your fan on higher to make these tasting notes cleaner and more apparent, and perhaps don’t taper your heat as you go (if needed to maintain your fast roast). Let this coffee rest after you roast it for around 7 days for maximum quality.
